Beech Mountain

The third part of our trip was spent skiing on Beech Mountain.  After leaving the cabin we drove north through Black Mountain.  Of course we had to stop and explore the town a little bit before moving on.  We hit up two local breweries and stopped in a few of their shops.  The drive up the mountain was done in the dark but was a fun, winding road with twists and hairpin turns.  I'm sure Josh had a blast maneuvering that road!

We checked into our condo for the night and settled in.  We had snatched up a $99 a person ski deal which included one day of skiing and accommodation.  This wasn't the nicest of places we stayed but definitely doable.

The next morning we got our first view of the mountain, barely.  A dense fog carpeted the town as we headed to rent our skis.  We were assured it would clear up by mid-morning so we headed up to the resort.

The resort had a nursery which was such a blessing.  We had called ahead and registered Mara so all we had to do when we got there was drop her off.  The lady running the day care was so amazing.  I was only able to pump a little the night before so she made sure to text me throughout the day so I could come and feed Mara.  She also sent me updates letting me know everything was going well.

I had never skied before and was excited (and a little nervous) for Josh to show me the ropes.  We started out on the bunny slopes learning the basics.  We covered snow plowing and stopping then moved on to criss-crossing the slope and the lift.  After I started feeling comfortable on the bunny slopes we moved to a little steeper hill nearby.  I don't think I ever made it down this hill without falling but luckily I was able to control almost all of my falls and didn't go head over heals.

We spent most of the morning practicing then took a short break for lunch and to check in on Mara.  Josh headed up the lift to try his hand at the black diamond and I trudged back to the bunny hill for some more practicing.  After a few more hours, Josh was convinced that I needed to go up the shortest lift and try my hand at a blue square.  I wasn't so sure but decided it was now or never.

I ended up falling a few times mainly because I didn't ski across the hill but tried to snow plow my way down.  I got going too fast and just couldn't control myself.

Before the end of the day I ended up going down the blue square one more time while Josh hit up the harder slopes again.  The second time was a lot more difficult than the first as the sun had melted some of the snow making the hill a bit slushy.  Josh said he even noticed a difference on the harder runs.

Overall we had a great day.  The conditions weren't ideal but it was great to try something new and most of all do it together.  I loved having Josh teach me and hopefully we can hit the slopes again soon.  This time maybe I'll get off the bunny slopes!

Nantahala National Forest, The Great Smokey's & The Appalachian Trail

Monday night we grabbed the keys to our cabin and headed out into the national forest.  It had just snowed a few days ago and we were warned that we may hit a bit of rough driving and we wanted to get there before dark.  The road wasn't too bad for the majority of the drive and was only a bit icy at the end.

We were blown away at how beautiful the cabin was.  The entire house was wood lined but still very modern.  There was a large great room with a welcoming fireplace.  The first floor also had a game room with foosball and air hockey and a hot tub on the outside porch.  Upstairs there was a pool table (to Josh's delight) and large master bedroom.

That night we splurge and bought some sea bass to grill.  Oh man was it delicious!  Josh did an amazing job manning the grill and it was such a treat.  Mara went to bed early that night and we finally had a few hours just the two of us.  We played pool (Josh killed me), Josh surprised me with beautiful earrings I had admired in the arts district but thought were too expensive and just hung out.  It was such a treat!

The next morning we tried to get moving, difficult with a baby, so we could do a little winter hiking.  A few days ago we had looked up some trails and were excited to get going.  It took us awhile to actually find the entrance to the Great Smoky National Park and then get to where we were going.

We hit the Tennessee/North Carolina border and Appalachian Trail about noon.  The hike we had originally planned on doing was going to be about three miles long. We set out with Mara on my back.  The trail was beautiful but covered in snow.  It made hiking a bit difficult and slick and there were definitely some rough spots where it was hard to maneuver with Mara on my back but we made it.  We didn't get to our original destination but were able to go about 2 miles before turning back and heading to the car.

After our hike we headed to Gatlinburg, TN, for a little lunch and to check out the town.  As soon as we hit the main street we knew we weren't going to spend much time here.  The town just screamed tourist trap. Both Josh and I wanted to just grab lunch and get back to the cabin.

Our second night at the cabin wasn't as relaxed as our first as Mara had a bit of a rough night but we did take advantage of the hot tub before the rain hit.

The cabin was beautiful and it was so nice to get away from the city and get outdoors.  Josh and I always try to do something outside when we travel and our short trip to the Great Smokey's was just the ticket.  I hope we can get back during our time here!

Asheville

Amidst all the trainings and general business at work, Josh was able to take a good chunk of leave last week.  We decided to take advantage of it and see a little bit of North Carolina that we had been wanting to get to.  Asheville is known for its good food, breweries and eclectic atmosphere and frankly just sounded like a great time so we packed up and headed out that way for a bit.

The drive out there was pleasantly uneventful.  Mara was amazing and slept for about 3/4 of it which is just so NOT like her.   It made for an easy drive and a nice time for Josh and I to chat too.  When we got to Asheville we checked in and emptied our car.  I will never underestimate how much stuff a little one needs again.  Our huge car was packed!

That night, Valentine's Day, we decided to head downtown for a quick bite then call it a day.  Wanting to jump right into the brewery scene we hit up a local pub, The Bier Garden, for dinner.  The food was pretty good and it was nice to walk around downtown to get a feel of what was there.

The next day we headed back downtown to check out the local shops and a few of the breweries that were in the area.  It was a bit cold especially with the wind blowing but we bundled up and strapped Mara in her carrier for extra warmth.  The first shop we hit was a fun outdoor gear consignment shop.  We love REI so it was great to browse the racks for some steals.  I tried on a few pairs of hiking pants but didn't have much luck.  Josh found a great windbreaker which he promptly put on to hold off the cold outside!

From there we ducked into an organic home and baby shop.  As always you find a lot of things you'd love to have but pulling the trigger to buy is always hard.  We ended up getting Mara some wool shoe liners to warm her toes!

After that it was on to lunch at a local brewery of course!  It was nice to get in out of the wind and sit down for a bit.  The rest of the day was spent wandering the downtown streets stopping at any shop or brewery that seemed interesting.  We walked hit up the old fashioned general store as well as toured a bead shop.  The end of the day found us at a local Korean restaurant, on a craving of Josh's, indulging in some bulgolgi and mahn doo.

The next day we headed down to the river arts district in Asheville.  Its a great little arts community that has taken up home in large warehouses along the river.  Although it was Sunday there were a good number of artists open and we were able to tour a few galleries ranging from ceramics to glass, oils to an artist who worked solely in duct tape.  For lunch we tried to locate a fun taco shop I had read about but were disappointed to see that it was closed after walking nearly a mile to get to it.  We settled for a quaint little cafe before heading over to the local brewery.

That afternoon we headed back over to the downtown area to get our growler filled with yummy home brews before checking out Asheville's oldest brewery, Asheville Brewing Company.  Finally our night ended with delicious Indian cuisine at Mela's.  Asheville is definitely one of those cities you can eat and drink your way around!

On President's day we headed out of town towards Bryson City, where we would get our cabin and spend the night.  Along the way we stopped in Waynesville for some lunch (at a local brewery of course!) and to explore their downtown.  I love wandering small downtowns, peering in little shops and finding the treasures that may lie within.  At this stop I found a few things in a small kitchen store that caught my eye!

From Waynesville we headed to Bryson City to check in with our cabin rental company.  But before heading to the cabin for the night we made sure to stop in to Nantahala Brewing company.  This was one of my favorite breweries solely on looks.  They were doing a ton of construction but it just looked like a fun place to hang out on a summer day when its packed with a band and a ton of people.

Asheville is a dynamic town with a ton of great places to shop, eat and drink!  I believe it has the highest number of breweries per capita in the U.S.! Its been on our bucket list since we arrived and I'm so glad we were able to take part of our trip to explore it.  Even though we spent a few days here, I don't think we even scratched the surface of this fun town!

Mara-18 Weeks

Weight: You are probably still hovering around 15 lbs.  At your four month appointment you were 14 lbs 14 oz. and 23 in. long.  You were in the 80th percentile in all categories!

Health: We have finally kicked this cold's butt.  We are still doing the eucalyptus oil in the humidifier as well as an eucalyptus rub on your feet and chest before bed.  It seemed to be the turning point for you.

Your teeth don't seem to be bothering you as much as they were.  I don't know if its the amber necklace or if you've taken a break from teething.  You're still chewing on everything with a good dose of drool.

Right now I think the biggest thing is your dry skin.  Your poor face is so dry and scaly.  We got two different types of creams at the doctors and they seem to be working a bit.  I just hate seeing you scratch your face and open it up.

Social: I love my social little girl.  You still love checking out everything and are perfectly content to sit with us for hours at a time if there is some kind of excitement around you.  People comment about how well behaved you are.  You are also great at going to other people.  You don't fuss when others steal you from mama at church or I deposit you in someone's arms so I can take off my coat.

You have been going to the nursery more and more at church and at bible study.  You friend Levi is in there too and I think you like hanging out with him.  You love checking out other kids and babies your age.

Diet: Breast milk.  We are working closer and closer to 6 months exclusively breastfed.  We have no plans on giving you cereal and will start you on fruits and veggies when you're ready.

Clothes: You are wearing mainly 6 month clothes although you still fit into some of your 3-6 month things.  We are squeezing you into your 3 month white onesies anytime we need something underneath an outfit.

All of your cloth diapers are now on the second snap setting.  We are still figuring out how to snap them correctly.

Mama's Favorites: I am loving your car seat toy.  Its been keeping you occupied while we are in the car.  Before you would just scream.  This gives me at least 15 minutes before we have a melt down.  I am also loving my new ring sling.  We almost never take your car seat in anymore.  The ergo is still our favorite for long holds and you have recently started napping on my back in the afternoons.

Crying: You are still so content. You have had some fussy periods at night but otherwise are one perfectly content little girl.  

Sleep: You are sleeping in your crib!!!  After a record two days its like nothing changed.  We are so proud of you.  You are pretty far away from sleeping through the night though.  I'm lucky if you go four hours before wanting to nurse.  This is a little difficult for me as before we could just nurse and fall back asleep.  Now we sit on the end of the bed so I get a little less sleep than before.  Thankfully you will consistently sleep about 12 hours each night.

Naps are still random and usually short.  Your morning nap is normally your longest and the only one you will take in your crib.  In the afternoons you normally will take about an hour nap if I put you on my back in the Ergo.  I have started leaving all things around the house till this time and I now just wear you and get things done!

This Week: We're preparing to go on a little vacation next week so we've been doing a lot of planning.  We picked up a Pack N play for you to sleep in because I'm scared about upsetting your new sleep routine.

We also tried taking some 3 month photos (yes we're behind) but you weren't having it.  We couldn't get you to smile for anything.  I felt like I was making an utter fool of myself and still you just stared at us.

You got your first snow experience.  I don't think you knew what to make of it all.  At first you were interested and then I think you realized it was cold.  We made snow angels and daddy let you taste it.

Baby Likes: You love glasses.  You reach for all beverages and love to lick the sides of them.  I'm sure this has to do with the teething but its fun to watch you do this.  You still love your Lamaze firefly and zebra.  You don't seem to get bored of your toys and are happy with the few you have.

You love the ergo and are enjoying riding on mama's back.  You still sit a bit low but I think you like being able to see more.  As before the jumper is still your favorite thing.  You will jump and jump and jump all while squeeling and laughing.  It's seriously the cutest thing.  You are getting so big that we only have about two more inches left before its too small for you.  Wish we had a higher door jam.

Milestones: You are more and more vocal each day.  You reach for toys and easily grasp them.  You have also mastered bringing things to your mouth and do that more than bringing your mouth to the toy.

You continue to smile and laugh daily.  You now are in complete control of your head and can sit up without being too propped.  You still have a bit to go on this skill but you're getting there.  You tend to lean forward and use your hands for extra support.

Best of Times:  Seeing your personality continue to blossom.  You are such a happy girl and love giving kisses out to mama and daddy.

Worst of Times:  Transitioning you to your crib.  Although you are doing well now, the first few nights were rough on both you and us.  Each night you seem to be doing better for the most part.  You have nights of regression but that's to be expected.

A Kombuca Reciepe

I discovered kombuca when we were visiting my sil last May.  I had never heard of the drink but really liked the taste.  Basically its a fermented tea that's brewed from a mushroom.  Yes sounds super appealing, right?  Don't let the whole mushroom thing throw you off.  Its really light and refreshing, especially in the summer.  You can also flavor it with juices and organic honey.  My favorite thing about it is how healthy it is.  Its a huge detox agent, helps regulate the digestive system and boosts immunity.

Here's what a typical brew day looks like:


I use two scobies to make 2 half gallon jars of kombuca.  First step is brewing the tea.


I measure out 3 quarts or 14 cups of filtered water and pour it into my stock pot on the stove.


I cover the pot to reduce contamination and let the water come to boil.


In the meantime I prep my other necessary ingredients.  For 2 half gallons of kombuca I use 1 cup of granulated sugar and 8 black tea bags.  You can also get creative and use green or flavored tea.  


After the water comes to a boil I add a cup of sugar.


I then stir in the sugar to make sure it is all dissolved.  


I then throw in all 8 tea bags to brew.  You can hang the strings out the side if you want too.


I then recover the lid (to prevent contamination) and let the tea brew.  I normally don't worry about how long it brews.  Wait at least 15 minutes though.  


After removing the tea bags, the next step is to bring the sweetened tea down to room temperature.  To do this I throw the pot in the sink (covered) and dump a whole lot of ice in to form an ice bath.  


Bringing the tea down to room temperature (68-70 degrees F) can take up to six hours.  I occasionally use a sterilized meat thermometer to check the temperature.  


Once your tea is at room temperature, you need to prepare your brewing supplies.  I use half gallon mason jars with the lids removed.  You can use any glass container to brew in that meets your size requirements.  Its important to note that you must brew in glass and there can be no metal in contact with the scobie during the brewing phase.  


After your brewing containers are sterilized (give them a good wash in really hot water), pour half of your sweetened tea into each container.  I don't really measure.  I just make sure there is a little head room in each jar.


I then grab my kombuca jars from the last brew session that have finished the fermentation process.  If you are just starting out you will grab your scobie and the starter tea it is in.  



With clean hands, I reach down into the finished jars and retrieve the scobie.  Then I place it in the new jars with the tea I just brewed.  During this process I try to keep things as serialized as possible.  As you can see I've kept the lids on the jars of new tea as well as the paper towels on the fermented tea.  In time you'll want to give your scobie some TLC removing any dead parts and discarding these.  If your scobie is really healthy it should grown an entire new body during the brewing process!


Next, I add one cup of the fermented tea into the just brewed tea jars.  I add one cup from each half gallon mason jar so I don't loose a lot from one particular jar.  This step is extremely necessary as its what "jump starts" the brewing process.


If you are starting from a scobie simply add the starter tea that came with the scobie to your jar.


Next I remove the metal lids and cover the new tea jars with paper towels.  You can use cheese cloth if you want to be fancy but I find this works too.  I secure it with a rubber band and place it in a warm place.  We keep ours by the dryer!  Let this sit for about a week before checking it.  We brew ours for approximately 10 days but it really depends on your preference.  The longer you brew the more fermented or vinegar-like it will become.  Taste daily after a week for optimal results. 


If this isn't your first batch, then you'll have to also deal with your brewed tea.  I first strain my tea with a mesh strainer (you can use cheese cloth) into a fresh mason jar.  You can really loose carbonation on this step so if you like yours extra fizzy you'll want to leave it on the counter for a day or two to carbonate.  Once you put it in the fridge it stops this process.  


Now if you don't want to flavor your kombuca go to the next step.  We do like regular kombuca but have started experimenting with different flavors.  You can be creative the only key is you want to make sure whatever you add is 100% organic/natural.  You don't want to add any fake sugars.  I like adding the naked brand juices and have also used raw honey in my brews.  Add about a 1/8 of a cup to each half gallon container.


The last step is to label.  I always put the flavor of the kombuca on the jar and also the day it goes bad.  You really shouldn't drink kombuca that's more than a month old so keeping track of the dates is important.
